Bilbo's Pizza Great Bread Recipe

When I attended Western Michigan University many years ago, my friends and I would gather at the local Bilbo's pizza for study and fun. One of my staple appetizers was something called Great Bread. A curiously different alternative to cheese garlic bread. 

While they have since removed it from the menu, I spoke with the manager and he was generous enough to provide it for me!


4" slices of sourdough french bread
melted butter
yellow mustard
minced/flake onion
poppy seeds
sliced swiss cheese

Make the bread!

Heat up your oven to broil. 

Brush both sides of the bread with melted butter and place on broiler pan.

Brush the tops of the bread with yellow mustard (until evenly covered - not too much!) then evenly sprinkle with minced onion. 

Lightly sprinkle each slice with poppy seeds then place a slice of swiss cheese on top. 

Broil until cheese becomes melted and bubbles - bread edges should be golden brown. 

Serve 'em up!
